Ok, it's viscosity, which is the resistance of a fluid to a shear stress. Syrup has a higher viscosity than water, but viscosity becomes lower with increasing temperature and pressure. Some "fluids" have viscosities that can be changed, like hair gel which is a pseudoplastic....something that changes viscosity when acted upon by a shear stress....ok, enough tech stuff (sorry).
